I recently heard a terrific pizza tutorial on one of my favorite food shows, Good Food on KCRW in Los Angeles,California. it reminded me of the pizza culture I grew up with in village of Croton on the Hudson 35 north of New York City. I spent several months living in Mexico and Guatemala while in graduate school in the 1990s. Getting a good slice of pizza represented one of the first things I did when my flight landed in New York. In the 1960s to 1980s, Croton had King’s Pizza, Honey’s, a bar and grill on which served Pizza, Capriccios, and later a short lived quasi pizza restaurant chain with perhaps two other locations in Westchester County, Pizza and Brew. Whatever the opinion, Croton has remained a chain pizza free village where traditional pizza (that immigrants from Latin America now make!) remained supreme for most of my life and I turn 50 this year!
