Philadelphian Carolyn Wyman has written and published three witty and accurate food histories, including one called "The Great Philly Cheesesteak Book" www.greatphillycheesesteakbook.com © 2011 Carolyn Wyman.
Philly has more than 300 years of culinary excellence under its belt. Cheesesteaks are not high on that list. At one time it was the caviar capital of the world until industrial pollution wiped out the sturgeon in its rivers.
BTW, I tell visitors the truth is ... only teenage boys from NJ and unsuspecting tourists eat Philly cheesesteaks.
